Firefly Hollow BrewCo (now New Cambridge)

MICRO

Founded: 2013

ROUTE: N/A

First Visit: 9/12/2019

Impression

Firefly Hollow was down a long alley off Center Street, in Bristol. Large parking area in back, but the problem was even finding the place, especially at night. There was no sign on Center Street. But once inside, FH offered a big rumpus room with tables of every variety: tall, low, long, short, and a really nice L-shaped bar. It was comfortable, inviting, and spacious, in a huge room. I have heard all the stories about how wonderful this place was back in the Ur-times around 2010, when beer was ramping up in CT, but I clearly visited when it was on the downslope. I did not have a single truly decent beer, much to my chagrin. FH is now the New Cambridge Project, and judging from my lone trip to NCP, the new owner/brewer is revitalizing the joint.

Beers Tasted

Beer 1: Vodnik Czech Pilsner (4.9% abv) This beer was more like an American Pale Ale, with little back-palate bitterness, as is characteristic of Czech Pilsner. (Tasted at Firefly Hollow 9/12/19.)

Beer 2: Bristol California Common (4.9% abv) Blah. Just blah. Zero flavor. I don't think I even finished this beer. (Tasted at Firefly Hollow 9/12/19.)

Beer 5: Rook #2 Maibock. (7.8% abv) Delicious & well-balanced. (Tasted at "VIP Tasting Experience," Smokedown Farm 7/24/21.)

Beer 5: Local Bud NEIPA (6% abv) Delicous and well-balanced. (Tasted at "VIP Tasting Experience," Smokedown Farm 7/24/21.)

Beer 3: Oktoberfest (6.3% abv) Weak, with vague malty sugars. (Tasted at Firefly Hollow 9/12/19.)

Beer 4: Red Lantern Irish Red (5.7% abv) Some sour on the attack, but otherwise like the California Common - rather insipid and uninspired. (Tasted at Firefly Hollow 9/12/19.)
